The Vineyard

Organically farmed single vineyards are the source of each wine, with a focus on maintaining the natural equilibrium of the ecosystem. The vines are selectively pruned and the foliage is managed by hand to balance production with plant vigor and health. In addition to cover crops, olive leaves are used to enrich the soil with essential micronutrients.

The Cantina

We have carefully restored and expanded an old cellar. At the heart of this transformation, we've created wine storage with controlled temperature and humidity, ensuring the perfect environment for our wines to mature.

A dedicated internal laboratory has also been established, where detailed analyses and studies are conducted to further refine our craft. To manage the fermentation process with precision, we've installed advanced refrigeration systems capable of both heating and cooling to regulate the tanks.

Above all, we have focused on creating a space that is not only highly functional but also a work of art—blending efficiency with beauty through the use of exclusive, carefully selected materials.

The Harvest

Through precise monitoring, tasting, and laboratory analysis of grape samples, the ideal harvest date is determined. On this carefully chosen day, all grapes are selectively handpicked and immediately processed to avoid premature oxidation.

The Vinification

Alcoholic and malolactic fermentation occur in temperature-controlled stainless steel tanks. After fermentation, the wine is aged for a minimum of two years in new oak barrels and is regularly evaluated to ensure proper aging.

When ready, the wine is bottled at the winery using only the best components and stored under perfect conditions, creating an ideal environment for age-worthy wines. The small production quantity allows for rigorous attention to detail, resulting in a high-quality product.

The Experimentation

As a perfumer, I merge the artistry of fragrance creation with the craftsmanship of winemaking, two disciplines deeply rooted in the exploration of aroma and sensory experience. I have developed a unique protocol designed to unlock the full aromatic potential of our grapes.

In addition to crafting our own vinification techniques, we have also extracted fragrances from vine flowers. These blossoms, while often subtle, play an essential role in both winemaking and perfumery, introducing delicate, nuanced aromatic notes that elevate the overall sensory complexity and harmony of the final creation.
